Named after the Italo-Gaelic word for smoke, Füm brings contemporary Italian cuisine centered around wood-fired cooking and sustainably sourced ingredients to your plate. The design channels the hand of a sculptor; carving solids and voids to reveal soft curves, with a bone-like soffit overhead and a palette of paprika red and pistachio green throughout. At its heart is an open kitchen and hearth, surrounded by a pasta making room, dry ager, wine area and DJ booth. A bespoke cocktail bar utilizing state of the art equipment from Behind Bars elevates the cocktail making experience to the guest’s view. Füm invites guests to experience the craft behind every plate. This project was designed in collaboration with HAND and the creative operating team at Grassfed Culture Hospitality.
